Makweti’s homemade lemon meringue ice cream

Summer in South Africa is all about exploring the great outdoors, soaking up the sunshine (we recommend SPF 30+!), and finding ways to celebrate this glorious season with family and friends.

What better way to cool down on a hot summer day than to indulge in a serving of wickedly-sweet ice cream. At Makweti, our favourite is our homemade lemon meringue flavoured ice cream – a refreshing treat for any time of the day!

How to make lemon meringue ice cream at home

SERVES 8

INGREDIENTS

  • 2 cups whipping cream
  • 200 g caster sugar
  • Zest and juice of 4 lemons
  • 16 mini meringues

COOKING INSTRUCTIONS

Stir the cream and sugar together until the sugar is dissolved. Pour into an ice tray and freeze until half set.
Turn out of the ice tray and add the lemon zest and juice and beat well. Freeze again for a few hours.
Turn out again, beat and add crumbled meringues. Turn into small freezer-proof dishes and freeze until ready to serve.
Just before serving, decorate each ice cream with a whole mini meringue.
